Coffee beans are best used within 7 to 21 days after roasting, when their oils and gases are most vibrant. After 21 days, as these elements fade, grinding the beans finer can help extract more flavor by increasing the surface area exposed to water.
Coffee beans start to lose their flavor as soon as they are ground. Grinding them right before brewing ensures you get the freshest possible flavor!
Pouring in a slow, circular motion and in stages ensures even saturation and extraction of coffee grounds, and prevents over-extraction. This technique produces a more balanced and flavorful cup of coffee.

Yemen Matari coffee is a rare gem with deep roots in the ancient port of Mocha, Yemen—the birthplace of coffee. Grown in the high-altitude Haraz Mountains using traditional methods, it’s a symbol of resilience amidst Yemen’s ongoing conflict. The war-torn conditions have made it incredibly difficult to obtain, as the coffee industry has been severely disrupted, and farmers face immense challenges in cultivating and exporting these precious beans.
This coffee delivers a bold, full-bodied flavor with rich notes of dark chocolate, dried fruit, and a hint of spice, along with a wine-like acidity and slightly smoky finish.
