Coffee Kyusu – Smooth & Tasty Coffee in Just Three Minutes

Even with coffee makers like a pour over maker or french press, it can sometimes be a lot to gather all the tools you need let alone the skills to make a delicious batch of coffee.

We wanted to make it easier to drink even more delicious coffee, so we decided to launch our Coffee Kyusu project here on Kickstarter for the coffee drinkers of the world!

We have at last created a coffee maker that will allow you to make flavorful coffee without a paper filter, but through a stainless filter inside the pot – the Coffee Kyusu! All you need to do is pour the hot water inside and wait 2 minutes!

Shaped like a traditional Japanese small teapot, we bring you the Coffee Kyusu that while incorporating Japanese culture makes drinking coffee easier, faster, and more consistent without quality barista skills.

1. Easy Brewing in 2 Minutes


To make a batch of coffee with the Coffee Kyusu, all you need to do is put your coffee grinds inside the stainless steel filter, pour in the appropriate amount of hot water, and wait 2 minutes. A best friend of yours especially on busy mornings!

2. Absorbs Any Bitterness Giving You Only a Smooth and Mellow Taste

Normally coffee makers are often associated with glass, but the Coffee Kyusu is made of a traditional Japanese craft known as Banko-yaki pottery. In order to take advantage of the highly water-absorbent characteristics of pottery, the inside of the pot is not glazed and has an uneven surface.

It is in this unevenness that adsorbs the components that causes an off taste or bitterness, resulting in a cohesive taste in your coffee!

As you would imagine, without the bitterness you are allowed to fully enjoy the coffee’s true richness and hidden flavors.

It is not just with bitterness, but also tartness and acidity that is reduced leaving you a mellow yet robust taste.


3. Bringing Out the Aroma and Flavor to the Fullest

Did you know that coffee originally contains oil?
This oil, called coffee oil, contains many aromatic components and is the decisive component for aroma and flavor.

When using a regular drip coffee maker, the oil tends to stay on the surface of the beans so the brewing method and the brewer’s technique can greatly affect the flavor.

The Coffee Kyusu simply soaks coffee grounds in hot water, and makes it possible for the coffee oil to be extracted more directly than you would see with a standard paper filter! You can enjoy the individuality of the beans more easily without losing any of their character.

It is very easy to use the Coffee Kyusu! All you need to do is put about 10g or 2 TBS of coffee grounds per cup then add about 120ml/4oz of hot water. Put the lid on and allow your coffee to brew for about 2 minutes, then pour into a cup! 

For this we recommend a course grind rather than fine as the bitterness can tend to be a bit stronger. A course or med-course grind similar to a French press ground would work best! However, if you like a more acidic taste to your coffee you can also try using a fine ground. You can play around with different types of beans, the amount of grounds you use (to make a less/more bold cup), and steep time to make it more to your liking.

You can also move the kyusu around a bit to further personalize the taste of coffee you make.
For those who prefer a dark roast, or when you want to reduce acidity, mixing around the kyusu a few times will extract the bitterness and any offness in flavor.

Give the Coffee Kyusu a little winding mix a few times to get the desired taste!

For iced coffee drinkers, you can easily make a delicious cold brew of coffee by placing the Coffee Kyusu directly into the refrigerator and leaving it overnight!

 It even makes a great cup of iced coffee!

Since most people drink coffee daily, the easier to clean up the better, right?
After you have made your coffee (or tea) to your liking, all you need to do is throw away the grounds and wash the kyusu gently with a sponge and dish soap.

To clean the spout, use a thinly cut sponge or straw cleaning brush.
Gently washing after each use is all the maintenance you need to keep the kyusu and the stainless filter clean!

The fine mesh cover filter on the inside not only prevents the grounds from getting into your coffee, but it also makes it easy to clean. It is a sustainable product thanks to the fact that you do not need a paper filter to make some coffee.

Banko-yaki, used to make the Coffee Kyusu, is a representative local industry of Yokkaichi city in Mie Prefecture that was designated as a national traditional craft in 1979. It is said that it all started in mid-Edo period, when a merchant from Kuwana by the name of Rozan Nunami had such a passion for tea as a hobby, he built a kiln in what is now Asahi-cho and made some tea utensils. He then stamped the seal “Banko Fueki” (万古不易) in hopes that his work would be handed down forever, giving the name “Banko-yaki”.

Banko-yaki is made from a local red clay that is high in iron. The shidei kyusu teapot is fired without glaze and has become a symbol of Banko-yaki. Using the iron-rich red Banko clay, it is baked for a long time using a method that absorbs the tartness of the tea and mellows its taste.

Banko-yaki does not have a fixed mold or technique. For that reason, since the forms are so variegated it is said that the Banko mark itself is what makes Banko-yaki what it is. Today, there are more than 100 Banko-yaki kilns around the centers of cities Yokkaichi and Komono in Mie Prefecture. So we took that tradition and updated it into making a coffee version.

We have teamed up with Touzan Seitosho, a ceramics maker that has been established since 1829, to develop the Coffee Kyusu that we are bringing this time to Kickstarter. The first generation of the company was a master kyusu teapot thrower who built it all in the Meiji era. Today, the fifth generation of Touzan has inherited the spirit of those craftsmen, and is working hard every day to create products specializing in kyusu teapots.

Therefore, each finished product will be slightly different from the next, having a unique feel of its own, making it your one and only Coffee Kyusu in the world. Whether it is for yourself, or a gift for a loved one, we hope it will be used and cherished in people’s daily lives.

Keeping the Japanese essence of the traditional kyusu teapot, it also has something that works with the Western image of coffee.
So we tried to create a design that is instantly recognizable as a kyusu teapot while not sticking out too much to clash with Western-style interiors.

The reddish color of the clay from Mie Prefecture slightly comes through the chic black color of the Coffee Kyusu, giving a more subtle sense of luxury based on the concept of creating a black color that is not too black.

The handle was also designed to be easily grasped so that pouring with one hand would almost be effortless.
